Kluai Buat Chi (Banana Cooked in Coconut Milk)

Ingredients:
2-3 small, slightly green bananas
4 cups coconut milk
1 cup sugar
¼ tsp salt
Directions:
- Slice the bananas lengthways, then in half
- Pour coconut milk into a pan, add sugar and salt. Bring to boil
- Add bananas and then bring back to boil for 2 minutes
- Remove from the heat and serve hot or room temperature
- Make 4 servings

Bua Loi Phuank (Taro Balls in Coconut Milk)
1 cup cooked mashed taro
2 cups glutinous-rice flour
1 cup corn flour
4 cups coconut milk
1 cup palm sugar
1/8 tsp salt
6-8 tbsps water
Directions:
· Put both flour into a large bowl
· Add a little water at a time and knead to form a dough
· Add mashed taro into the dough and knead well
· Roll into a tiny ball; pearl size, and set aside
· Dissolve sugar and salt in coconut milk over a low heat and stir constantly
· Bring to boil and add the taro balls. When they float mean they’re cooked. Remove from the heat
· Serve hot. Make 4-6 servings

Kaw Nerw Pek Perk (Sticky rice & Taro in Coconut Milk)

Ingredients:
2 cups Thai sticky rice
4 cups coconut milk
¾ cup sugar
1 cup cooked taro, cubed (optional)
½ cup shredded coconut (optional)
Directions:
- Cook at a low heat, in a pot add coconut milk and rice. Stir frequently
- After the rice starts to get open, put sugar. Stir constantly
- Add taro and/or coconut if you wish
- Serve warm

Buat Fuk Toong (Pumpkin in Sweet Coconut Milk)

Ingredients:
2 cups 1/2 inch cut pumpkin (if you couldn't find Thai pumpkin, you can substitute it with Japanese one)
2 1/2 cups light coconut milk
1/2 cup coconut cream
1/4 cup sugar
1/2 cup palm sugar
a pitch of salt
Directions:
- Cook at a medium heat, in a medium pot add coconut milk, both sugars, and salt. After the sugar is dissolved, pour it over a stainer in a medium clean bowl. Then pour it back to the pot and bring it to boil.
- Add pumpkin and let it cook through. Pour the coconut cream. Stir
- Remove from the heat and let it cool
- Serve warm
Please note:
Clean the pumpkin well. Remove the seed and peel the skin, but leave some green on it as you can see from the picture. Do not over cook the pumpkin. Please insert toothpick to a cooked pumpkin, if it goes through easy, which means it is cooked. After you remove from the heat, the pumpkin still remind in the hot pot and it will continue cooking until it is cool.
