Yam Nuea (Spicy Beef Salad)

Ingredients:
1 lb beef tenderloin
2 garlic cloves
¼ cup chopped cilantro
¼ cup sliced red onions
¼ cup sliced cucumbers
1-quartered tomato
¼ cup sugar
2 tsps fish sauce
2 tsps lime juice
salt to taste
2 sliced green onions
3-5 sliced green Thai chili peppers (optional)
Directions:
- Cook beef until medium rare, or as preferred and cut into small thin slices.
- In medium bowl mix sugar, fish sauce, lime juice, and fresh chili pepper together
- Then add onions, cucumbers, and tomato into the mixing bowl. Taste
- Add beef into the mixing bowl and mix well.
- Garnish with cilantro and green onion
- Make 4-6 servings

Beef Waterfall / Nuea Num Tok ( Eastern Spicy Beef Salad)
Ingredients:
1 lb beef tenderloin
¼ cup sliced red onions
2-1 inch cut green onions
¼ cup mint leaves
¼ cup basil leaves
¼ cup sugar
2 tsps fish sauce
2 tsps lime juice
1-2 tsps roasted ground rice
1 tsp Thai dried peppers (optional)
Directions:
- Cook beef until medium rare, or as preferred and cut into small thin slices.
- In medium bowl mix sugar, fish sauce, lime juice, roasted ground rice, and dried chili pepper together
- Then add onions, mint leaves, and basil leaves into the mixing bowl. Taste
- Add beef into the mixing bowl and mix well.
- Garnish with green onion
- Make 4-6 servings

Som Tom (Papaya Salad)
Ingredients:
1 medium green papaya
2-3 garlic cloves
3-4 green Thai chili (optional; add more for more spicy)
2 tomatoes, wedges
1/2 cup 1 inch cut green beans
1/4 cup shredded carrot
1/3 cup roasted peanuts
2-3 tbsp fish sauce
1 tbsp sugar
2-3 tbsp lime juice
Directions: - Peel papaya and rinse it. Remove the seeds and shred papaya. Set aside
- Pound garlic and chilies in a mortar with a pestle; just crush it, not paste
- Add half of papaya, tomatoes, carrot, and green beans into mortar. Then pound them gently
- Add fish sauce, sugar, and lime juice to taste. Mix well
- Then add the remaining papaya into mortar and pound it gently
- Serve cold.
Traditionally Thais in their mother land do not add any carrot into the papaya salad, however here in the States Thais and restaurant do, so then it’s optional! If you like it to be more colorful, then you can add it.

Shrimps in Lime Chili Sauce (Koong Ma Naw)

Ingredients:
20 Fresh Shrimps
Fresh iceberg cabbage
15 fresh Thai chili (optional; it depends how spicy you like)
5 tbsps lime juice
3 tsps sugar
2 tbsps fish sauce
10 gloves garlic
Directions:
· Add lemon juice in cold water
· Wash and soak fresh shrimp in mixed cold water
· Place shrimps in microwave proof dish and cook in microwave about 1
minute.
Lime Chili Sauce
· Blend fresh chili, lime juice, garlic, sugar, and fish sauce together in the food processor about 2 minutes.
· Pour Lime Chili sauce on the top of cooked shrimps, and then put it into fridge for 15 minutes.
· Garnish cabbage on serving plate and add the shrimps on the top. Can be served with other fresh vegetables such as cucumber.
